- 1/2 TSP Cumin Seed
- 1/2 TSP Allspice
- 2 TSP Kosher Salt
- 1 TSP Freshly Ground Black Pepper
- 2 Limes (juiced)
- Mango Relish
- 1/2 Mango
- 2 Green Onions
- 1 Lime (juiced)
- 1 Jalapeño (seeds removed)
- Kosher Salt & Freshly Ground Black Pepper (pinch/to taste)

- PREPARING THE JERK MARINADE
Place fennel, star anise, clove, cumin seed, allspice, and cinnamon in a small pan. Place the pan over the stove on medi-um heat. - Ensure the marinade is covering the entire steak.Refrigerate, and let the chuck eye steak marinade for at least 6 hours. The apple cider vinegar and enzymes in the kiwi with help break down the collagen in the steak, resulting in an even more tender cut
- PREPARING THE MANGO RELISH
For the relish, peel and dice the remaining half of the mango. Slice the green onion, and dice the jalapeño.Mix the diced mango, jalapeño, and green onion together. Add the juice of one lime.Season with kosher salt and freshly ground black pepper. - FINAL STEPS
Remove the Fullblood Wagyu chuck eye steak from the marinade. Do not rinse it off. Place steak on a hot charcoal or propane grill. Cook until an internal temperature of 120 degrees Fahrenheit for rare fin-ish. For a medium-rare finish, cook to an internal temperature of 130-135 degrees Fahrenheit.
