Mastani Chat is an Indian evening snack recipe. It is prepared by using shallow fry pea patties, sweet and sour orange dip, hung curd, with grilled paneer slices, garnished with spices, julienne carrots, beetroots, citrus zest, pomegranate seeds, nylon sev and mint leaves. It can be served as a snack, a side dish or a light meal. So let us now proceed to check the ingredients required and the method of making the very very delicious Mastani Chat.
Ingredients and spices that need to be Get to make Mastani Chat:
- For Tikki:
- 1 and 1/2 cups Frozen green peas (boiled And coarsely chopped)
- 1/4 cup Grated paneer
- 1/4 cup Boiled mashed potatoes
- 2-3 tbsp Corn flour
- 2 tbsp Finally chopped green chillies
- 2 tbsp Ginger paste
- 3 tbsp Finally chopped coriander leaves
- 2 tbsp Garam masala
- 1 tsp Roasted cumin powder
- 1 tsp Fennel powder
- 1/2 tsp White pepper powder
- 2 tsp Coarsely ground black pepper powder
- 1 tsp Black salt
- 1/4 tsp Turmeric powder
- to taste Salt
- as required Oil for shallow frying
- For For Mint Chutney ::
- 1 cup Mint leaves 1cup
- 1 cup Coriander leaves 1 cup
- 3-4 pieces Garlic cloves
- 3 pieces Green chillies
- 1 inch Ginger
- 2 tbsp Lemon juice
- 2 tbsp Curd
- 1 tsp Sugar
- to taste Salt
- 1/4 tsp Black salt
- Few ice cubes
- For Curd::
- 2 cups Hung curd
- 2-3 tbsp Powder sugar
- 1 pinch salt
- 3 tbsp Green mint chutney
- For Sweet and sour orange chutney :
- 600 ml Orange juice
- 6 tbsp Sugar
- 5 pieces Black pepper corns
- 2 pieces Cardamom
- 2 cloves
- 1 piece star anise
- 1 inch Cinnamon Stick
- 1/4 tsp + 1 pinch Black salt
- 1/4 tsp Nut meg powder
- For Garnishing ::
- few Grilled paneer slices
- as needed Thin julienne carrots (3 cm)
- as required Thin julienne beetroots (3 cm)
- as required Julienne citrus zest (3cm)
- as required Pomegranate seeds
- some Mint leaves
- as required Nylon sev
- as required Mix chat Masala
Instructions to make Mastani Chat
- Heat a non-stick saucepan, add orange juice, black peppercorns, cardamom, clove, star anise, nutmeg powder, cinnamon stick, boil it on medium heat for 10 to15 mins and stir this continuously. After 15 mins add sugar and black salt, mix well. Cook for 2 to 3 mins, off the flame. Cool it completely and pour this sweet and sour orange chutney into a glass jar and keep this jar inside the refrigerator. You can store this chutney for about 2 weeks.
- Bring a blender jar, add green chillies, garlic, sugar, ginger and salt, blend this. Now add mint leaves, coriander leaves, lemon juice, curd, black salt and ice cubes, blend into smooth mixture. Pour this into a glass jar. Green mint chutney is ready.
- In a mixing bowl, add hung curd, sugar and salt, mix well to get a creamy texture. Bring a bowl, add half in the bowl, add mint chutney and mix well. Bring 2 piping bags, in one piping bag add plain curd and in another bag add mint flavoured curd and keep this into the refrigerator.
- Making Tikki:: In a mixing bowl, add coarsely crushed peas, grated paneer, mashed potatoes, cornflour, green chillies, ginger paste, coriander leaves and mix well. Add all the dry ingredients in this mixture, mix well. Divide the mixture into equal portions and shape them into round tikkis. Heat sufficient oil in a non-stick kadhai and shallow fry the tikkis, a few at a time, till golden brown. Drain all the tikkis on absorbent paper. Tikkis (patties) are ready. Mastani Chat is ready to serve.
