- Turn the cooktop or gas stove to medium-high temp and warm up the skillet. Add in olive oil so the patties don't stick. Now place 6 patties or as many as you can fit where there is space between them. You don't want them touching when cooking. Make sure to press down on the centers of all the patties when in the pan. The reason for this is when it cooks it swells up and by pressing the centers the patty holds it shape. Now cook the patties for 4 minutes on each side until done.
- Remove the patties from the pan and set aside. It's time to make the demiguise sauce. Add the ketchup, tonkatsu sauces and mix well with the meat juices. Turn the cooktop down to medium-low temp. Now add in the red wine, soy sauce and butter. Mix well until sauce is blended and the wine has reduced. Should look like photo below.
- Once the sauce has come to a simmer add back in the hamburger patties one by one coating them in the sauce. Make sure you coat both sides. Turn off the heat cover and set aside. Now it time to get your plates ready. Hambagu is typically served with rice and a salad. Make sure you have rice already cooked and just warm it up and add to your plate.
