Steps to make Creole Chicken Sandwiches

  1. Preheat grill.
    Season chicken thighs (dry) with cayenne pepper, paprika, oregano, thyme, and mustard. Approximately equal amounts of all but cayenne, cayenne to taste.
    Don't forget salt and black pepper too.
    Grill chicken thighs. Don't be afraid of crispy bits or overcooking them slightly, this only makes them more tender (to a point).

  3. While the sauce is reducing, you can slice and toast bread and prepare garlic butter.
    Slice bread in half lengthwise (no hinge) then toast in the oven or on the grill.
    Add 1 stick of butter to pot over low, add fresh minced garlic after barely melted, then add add oregano, black pepper, and Cajun seasoning, all to taste.
  4. Assembly starts by brushing all toasted bread with garlic butter, feel free to be liberal.
    Then add a bit of sauce on the bottom piece, followed by grilled chicken, then more sauce, and finally the top piece of bread.
    After assembling the sandwich, slice into pieces appropriate for the occasion.
  5. A few notes:
    I've only made this once (and according to the given recipe), but my main complaint was that the overall flavor profile was missing a bit of sweetness and acidity.
    One could add a teaspoon of sugar to the sauce, and then squeeze a little fresh lemon juice on the chicken when assembling. Alternatively, a bit of balsamic vinegar in the sauce could also be nice.
